What a nice day for grilled cheese

Maybe it’s because I’m pregnant and have intense and very random cravings for otherwise very normal foods, but today was all about grilled cheese for me. Yummy delicious melty american cheese on wheat with dill pickles. No this is not a pregnant haze concoction this is something I grew up eating, thanks mom! So with my trusty frying pan in hand and all my ingredients laid out, I made an awesome lunch for the Hubbs and myself, only to have my 2 little ones asking for some. Ugh, guilt. “No, honey. These will make you sick.” My 2 girls have several food allergies which include all things dairy. Casein to be exact, and Soy doesn’t sit well with them either. Thank you LORD for almond milk!

So after some clever distracting, bait and switching, and all out stuffing my face while they weren’t looking, I finished my American classic. But that got me thinking. We’ve known for over a year that out first child couldn’t have dairy of any kind or else, eek. But now that our second who is nearing that age of whole milk introduction has shown all too familiar digestive reactions, we’ve resolved to live a very dairy free life. Which is a real trouble for mama because I could live off of sharp cheddar for the rest of my life and be very happy, albeit fat.

Cue my best digital friend, google, to which I discovered daiya dairy free cheese. A cheese that supposedly tastes and melts just like the real deal and isn’t made from soy. So for all my vegan friends out there, this is the cheese for you. Daiya cheese found here boasts being

Now comes 2 problems. I live in a small town in Florida not a metropolis offering several health food store options. No one in my general area is carrying this product. And as much as I love cheese, I won’t drive 45 min to an hour one direction to get it, and Amazon.com does not have any available currently. Dissapointment #1. My second disappointment is the sticker shock attached to this miraculous culinary creation. An 8oz bag of this cheesy wonder runs $4.99 and a 5 lb block of this stuff is anywhere between $40 – $45, not much of a price break here. My couponing heart which refuses to pay retail for much of anything is broken over this price point.
A day full of grilled cheese and mac ‘n cheese will have to wait for my little allergy plagued princesses, unless the good people at Daiya Foods are feeling generous, wink wink, nudge nudge.
